Crispy Durian Roll

I have been eating a lot of durian this season as compared to previous.  I think 5 rounds + 1 durian party that I attended with H and her family.

Somehow I find that this year, most of them are very sweet tasting.  Personally I like the bitter-sweet variety more.  Could it be due to cross breeding or some GM experiment that I seem to be seeing very generic tasting varieties?

Whatever it is, I still love durian and doubt I will get sick of it.  

Wanted to make something different apart from the durian ice cream I always churned out.  Long time ago, I tasted Crispy Durian Rolls at a dim sum restaurant and it had since stayed in my mind.   Then in the early morning while doing my grocery, I saw some frozen pack available.  

Bingo, on my way to the car park, I bought two durians from the vendor and since I have some Vietnamese Rice papers …. tada....  here is my Crispy Durian Rolls

Dream comes true. hehehe

Really easy and fuss free and best of all, family enjoyed it especially my dad.



What you need:

550g durian flesh
2 packets of Vietnamese rice roll paper (the standard and the net version)
Oil for deep frying

Methods:

Place standard rice roll paper onto a damp piece of clean kitchen towel.  Wet rice paper further with water using your fingers.

Once soften, place a dollop of durian flesh onto it and rolled like spring roll.

Next I add it to another net rice paper (it comes with a paper backing sheet) and do the same wrapping method but using the backing sheet as guidance so that it is easier to handle.

Freeze it and then deep fried it till golden brown.

Serve hot.

    1. I didn't need to mash it as my durian were ripe and soft. Just de seed it and mixed together with the rest. As for the brand, I have already attached a pic. I am still looking out for this in Singapore though. But I think you can use the plain ones.

  9. Your rice paper is very special. My rice papers from Vietnam refused to be fried. They dissolved in hot oil.. Disaster.
