We found a zi char stall nearby and the stir fry noodles are not too bad. I had once the Fried Mee Sua and I like it.
So here I am, attempting on my own as I heard that I can skip the deep fried step and instead do a healthier way by air frying it.
Wonderful!
What you need:
Serve 4
1 packet of Mee Suah
3 eggs, beaten
1 carrot, shredded
1 packet of fresh shitake mushroom, sliced
200g prawns, shelled and deveined, marinate with sesame oil and soya sauce
100g minced pork, marinate with sesame oil and soya sauce
100g sliced fish, marinate with sesame oil and soya sauce
some cai sim
Pepper
fish sauce (to taste)
1 tbsp oyster sauce
1 carrot, shredded
1 packet of fresh shitake mushroom, sliced
200g prawns, shelled and deveined, marinate with sesame oil and soya sauce
100g minced pork, marinate with sesame oil and soya sauce
100g sliced fish, marinate with sesame oil and soya sauce

1 tbsp oyster sauce
Method:
Air fried Mee Suah at 160°C for 7 mins. Remove. (I have done 3.5 min and flip over the noodle and continue with another 3.5min)
Blanch fried mee suah in boiling water until soft. Dish and drain excess water.
Heat 1 tbsp oil in wok. Add in beaten eggs. Swirl pan round to found egg omelette. Remove and slice thinly. Set aside.
Heat oil and add in 1 tbsp on minced garlic, fry until fragrant and add in pork, followed by fish slices and prawns. Stir fry until it is cooked. Remove.
Heat wok with oil, add 1 tbsp of minced garlic, fry until fragrant and add in mee suah.
Loosen noodle with either chopstick or fork. Distribute minced garlic evenly.
Add in cooked seafood, meat, mushroom and vegetable. Stir to distribute evenly.
Add oyster sauce mixed with 1/2 cup water. Mix well.
Season with soya sauce and pepper.
Garnish with egg and serve.

DeleteEdith, what a brilliant way to cook fried mee suah by airfrying it. I would never think of that. Although your fried mee suah looks like beehoon, I'm sure the taste is quite different altogether and tastes well with the ingredients. Thanks for participating in AFF!
