Stir Fried Long Bean

My son loves long bean but unfortunately when I cook Stir Fried Long Bean, he wasn't home for dinner.  The only way that I know how to cook this, is to pair with pounded dried shrimps and we like it slightly under cooked to give that crunch but my dad loves it soft.  

What is your preference?  and how else do you cook this with?  



What you need:

Long bean
Carrot
100g dried shrimp, soak and pounded.
minced garlic
2 chilli padi, pounded

Method:

Cut long bean to approx 1 1/2" long

Cut carrot to approx 1 1/2" long.

In up oil in a wok, add in minced garlic, chilli (Optional) and pounded dried shrimp.  Stir fried until fragrant.

Add in carrot.  Cook for 2 mins.

Add in long bean, continue to cook until long bean turned dark green.  

Add in a dash of fish sauce, a little sugar and salt (to taste).  

Add a dash of water, cover and let it cook for 3 mins. (depend on your preference to the texture).

Remove.
