Steam Banana Cupcake

We have too much bananas at home at this moment.  So when I saw LA shared a really pretty Steam Banana Cupcake, I knew I found another way to eat up those bananas!

Findings: The texture is soft and moist. 


What you need:
Yield: 15 small

130g unsalted butter
300g ripe banana
100g gula melaka
25g caster sugar
½ tsp salt
1 whole egg
1 tsp vanilla extract
250g plain flour
1 tsp baking powder
½ tsp baking soda
90g milk ( room temp )

Method:

Melt butter and set aside to cool completely. 

Sieve all dry ingredients.  Set aside.

Bring water to boil on the steamer.

In a blender, add bananas, Gula Melaka, caster sugar and egg and blitz until all incorporate well.

Add in milk and blend well again. (batter will be bubbly and watery ).

Strain mixture into another mixing bowl.

Fold 1/3 of the flour mixture with a balloon whisk and alternate with ½ cooled melted butter until both mixture is finished.

Whisk till batter well incorporated (batter will be thick)

Spoon the batter into aluminium cup lined with liner till 90% full.

Cover the steamer lid with cloth.

Steam on high for 15 min.
