Carrot Muffin

I bought too many carrots, needed to clear some for this Carrot Muffin.  Interesting recipe as this batter needs to be chilled overnight before baking.


Findings: This muffin is so tender and soft.  I really love it especially when it is eaten freshly baked as the crumble adds a touch of crunch.

What you need:

180g cake flour
3g baking soda
1g baking powder
4g cinnamon powder
3g salt
180g sugar
140g oil
¼ tsp vanilla
80g egg
212 Carrot

Method:

Peel the carrot and chop.

Mixed all dry ingredients together.  Set aside.

In another bowl, mix the sugar and oil together.

Mix in vanilla and egg.

Add flour to egg mixture in 2 additions, mixing well in each.

Mix in the chopped carrots.

Cling wrap and chill overnight in the fridge.

Crumbles

What you need:

47g cake flour
66g oats
15g brown sugar
10g castor sugar
0.4g cinnamon powder
0.2g nutmeg powder
0.2g salt
1/8 tsp vanilla
43g cold butter, cubed

Method

Knead the butter into the mixture.

Assembly

Preheat oven to 220℃.

Pour the overnight mixture into the muffin tray.

Sprinkle crumbles on top.

Lower oven temp to 160℃ and bake for 40 mins.

Garlic, ham and cheese scones

These days, hubby got so bored with eat out breakfast that he has been bringing home made breakfast instead.  So I need to be creative.

Have some left over baked garlic in the freezer, time to use it up.  So let's have Garlic, ham and cheese scones.



What you need:
Yield : 6 pcs

50g unsalted butter, cube and frozen
200g cake flour
6g baking powder
30g sugar

30g egg
50g whipping cream
10g yogurt 

40g baked garlic, mashed
40g ham, cut into bits

Egg yolk for brushing

Method:

Rubbed cake flour, salt, baking powder and sugar into the butter until bread crumb like.

Add in the egg, whipping cream and yogurt.  Using a spatula, mix.

Add in the garlic and ham.  Press and fold.

Roll and fold to 2.5cm long.  Chill for 2 hours.

Roll to 2.5cm thick.

Using a 5.5cm round cutter, cut into 6 pieces.  

Place on baking sheet and brush with egg yolk.

Bake for 200℃ for 15 - 17 mins.

Peanut butter and Jam Muffin

Circuit Breaker Day 51

During this period, We only take brunch, tea and dinner as my family wakes up really late to have breakfast.

So besides cracking my head for dinner ideas, I have to think about tea break too.  Since I have not been baking muffin for the longest time.  Today's tea will be Peanut Butter and Jam Muffin.


Learning experience: 

I managed to get 6 instead of 9 as indicated in the recipe.   I should have sandwiched the peanut butter and jam in between the batter.  The peanut butter for this packaging is softer than the bottle one so the peanut butter did not sink into the batter.  Thus during baking, I can see the peanut butter and jam gliding down onto the pan.  Thankfully, I did not lose all.  

Really love this combination as it reminded me so much Goober spread that I love.

What you need:
yield 6 pcs

200g plain flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
50g castor sugar
50g butter, melted
240g plain yoghurt
50g milk
1 egg
½ tsp vanilla

Peanut butter
Jam

Method:

Preheat oven to 180°C.  Greased muffin cups.

Sift plain flour, baking powder, baking soda and salt.  

Whisk in the sugar.  Set aside.

In another bowl, combine melted butter, plain yoghurt, milk, egg and vanilla.  Whisk to combine.

Fold in the flour mixture to the egg mixture.    Do not over overfold.

Half fill the muffin cup with batter.

Add in peanut butter and jam.  Top off the remaining batter.  (You can add a little peanut butter and jam on top to make it pretty)

Bake for 15 - 20 mins or until a skewer comes out clean.

Transfer to a cooling rack.

NOTE: DO NOT EAT IMMEDIATELY as the Jam and peanut butter is burning hot.

One bowl banana bread

Long ago, I attempted a One bowl banana bread recipe (here).   After viewing a you-tube channel, it looks pretty similar to the one I tried before.

Since I have some banana that I bought the other day and it has ripen to the stage for baking.  I baked this, think will be great for my kid to have it as on the go breakfast.


Learning experience: 

I would increase the sugar the next round as I find it not sweet enough despite the ripen bananas.

What you need:

300g ripe bananas
150g unsalted butter, melted (set aside 20g)
2 eggs
3 tbsp milk
100g brown sugar (set aside 15g) (will increase to 150g)
300g plain flour
¼ tsp salt
¼ tsp baking soda
½ tbsp baking powder
100g nuts of your choice, roasted and roughly chopped

Method:

Preheat oven to 175°C.   Greased a loaf pan.

In a big mixing bowl, mashed bananas.

Add in melted butter, brown sugar, milk, and eggs.

Whisk until smooth.

Sift in plain flour, salt, baking soda and baking powder.  Mix to combine.

Add in chopped nuts.

Mix to incorporated

Pour into the loaf pan, sprinkler the remaining nuts on top.  Pressing down a little to adhere.  Then drizzle in the brown sugar and melted over it.                 

Bake for 60 mins, covered with foil and remove to continue baking for another 10 - 15 mins.

Cheese Muffin

Have not been baking muffins for the longest time.  After this festive period, I am sure everyone is sugar overload.  So I wanted to bake something savoury for my family.  

I have some yogurt left and saw this Cheese Muffin on a FB group.  I think it will be a nice welcome for my kiddo's breakfast as she has been eating CNY goodies.  I am sure she is by now sick of those.

Getting cheese into muffins will also tempt my son to eat as he loves cheese to the max.  





Findings: This recipe bakes beautifully.  The texture is nice and fluffy and the cheese taste is good too.

I used an ice cream scoop and fill it with slightly less than a scoop.  It did not over flow and has a nice top as well.

What you need:
yield 11 pcs

170g plain flour
15g castor sugar
¼ tsp salt
2 tsp baking powder
140g cheddar cheese, grated
57g unsalted butter, melted
100g fresh milk
120g yogurt
1 egg
½ tsp black pepper, grounded

Garnish:

Mix together
25g Cheddar cheese, grated
25g Parmesan cheese, grated
A dash paprika

Method:

Preheat oven to 190°C.  Grease and lined 12 muffin tray.

In a bowl, mix flour, salt, baking powder, sugar and cheese together.

In a separate bowl, whisk fresh milk, egg, yogurt and melted butter until well combined.

Add milk mixture into the flour mixture and mix until combined.

Scoop batter into muffin pan and sprinkle garnish over the top.

Bake for 20 mins or until golden brown and skewer came out clean.

Muffin (Kids friendly)

For today's bake along session with her friend, D.  My girl wanted to bake this Muffin (kids friendly) recipe which she learnt when young, 

Really easy and idiot proof I must say.  This recipe is good to work with for children.  

Try it since it is school holiday.


What you need:

125g plain flour
¾ tsp baking powder
¼ tsp slat
63g butter
125g sugar
1 large egg
1 tsp vanilla
63g milk

Method:

Preheat oven to 180°C

Line muffin pan.

Whisk together flour, baking powder and salt.  Set aside.

Beat butter and sugar on med high until light and fluffy (about 3 mins)

Add in the egg and beat until combined.

Mix in the vanilla.

Add flour mixture and beat to combine.

Add milk and combine.  DO NOT OVER MIX.

Fill muffin cup to ¾ full. 

Bake for 30 mins or until brown.


Note:

If you want to add in fillings, put 3 tbsp of batter first and then add your choice of flavour and top off with more batter.

Black Pepper Popovers

I first tasted popover when I had it at The Line.  To me, it was nothing special.  It is a hollow bread like that goes with a savoury dish but later on, I also found out that popover can goes with something sweet too.

Today I chose Black Pepper Popover filled with Cheddar and Herb Scrambled Eggs and Maple-Mustard Glazed Bacon by Bobby Flay.



I was delighted how it came out.  Just like souffle, it was tall and pretty.



But it refused to pose for me.  :(



What you need


Maple Mustard Glazed Bacon

¼ cup grade B pure maple syrup
1 heaping tbsp Dijon mustard
2 tbsp canola oil

6 slices thick-cut bacon



Cheddar and herb scramble

2 tbsp oil
12 cherry tomatoes, halved
Salt and freshly ground black pepper
12 large eggs
3 ounces grated Cheddar
1 tbsp finely chopped fresh chives
1 tbsp finely chopped fresh parsely leaves
2 tsp finely chopped fresh tarragon

6 tbsp unsalted butter, cut into pieces

Popovers

10g unsalted butter, melted and cooled, plus more for greasing pans
103g plain flour
164g whole milk, at room temperature
½ tsp kosher salt
½ tsp coarsely ground black pepper
2 large eggs, at room temperature

Method:

For the bacon: 

Whisk the maple syrup and mustard together. Set aside.

Heat the canola oil in a large cast-iron pan over high heat. Add the bacon and cook until browned on the bottom, about 3 minutes. Flip and brush generously with the maple syrup mixture. Cook for another 2 minutes, and then transfer to a platter.

For the cheddar and herb scramble:

Heat the canola oil over high heat in another cast-iron skillet. Add the cherry tomatoes cut-side down and cook until seared, 1 to 2 minutes. Season them with salt and pepper, and transfer to a plate.

Whisk together the eggs, Cheddar, chives, parsley and tarragon in a large bowl and sprinkle with salt and pepper.

Heat the butter in a large nonstick pan over medium-low heat until it begins to sizzle.

Add the egg mixture and slowly cook, stirring with a wooden spoon, until soft curds form.

Remove from the heat and set aside.

For the popovers:

Preheat the oven to 220°C  

Generously brush a 6-slot aluminum muffin pan with softened butter. Place the pan in the oven to heat 5 minutes before you are ready to add the batter.

Whisk together the melted butter, flour, milk, salt, pepper and eggs until smooth. The batter should be thin.

Fill the popover pans less than halfway full and bake for exactly 30 minutes.

Do not open the oven door while popovers are baking.

Note: Make the popovers last because they need to be eaten almost immediately once removed from the oven.

For assembly:

Open the popovers and fill each half with a slice of the bacon.

Top each with the eggs, and a cherry tomato half.

Serve the remaining tomatoes on the side.



As usual I was again too late for my submission for this Bake Along Event.  Nevertheless I still had fun.

Calamansi Muffin

My calamansi aka lime tree needed harvesting so this is the best way to use as many limes as the recipe requested.    I have forgotten to count how many limes that I used but I am sure it was nearly half of what I harvested. 

Though I have been on business and holiday to the Philippines quite a few times and hubby and I did talked about visiting Boracay but somehow we never get round to doing it.  

In December we will be heading Philippine again and once again, we did talk about this place but the timing will be bad to make this trip as it will be monsoon.  Haiz.... just not meant to be as of now.

Apparently one of the cafe in Boracay is famous for the Calamansi Muffin.  As I have never been there before, I can't comment whether it was really that good.   Guess it will take a while more for me to sample it.  

I also needed to bring some snacks to kids' taekwondo competition as it will be a full day event.

For this attempt, I substituted a Lemon Muffin recipe with Calamansi from my favourite Muffin book.

As my girl is not a fan of chocolatey bakes, let's hope she likes this Calamansi Muffin that I baked.


Findings: Hubby said it is a tad too sour but for me I kind of like it.  As for the texture, I might have over mixed it a little as it was a little on the dense side. Overall, it is still not that bad.  


What you need:

125g plain flour
100g castor sugar
1 tsp baking powder
1 tsp salt
56g butter
1/2 cup fresh calamansi juice
2 eggs
1 tsp of lime zest

Method:

Preheat oven to 180 deg.  Greased muffin tray.

Combine dry ingredients and mix well.

Melt butter in microwave and let it cool a little.  

Add in calamansi juice, eggs and calamansi zest.

Stir in the egg mixture into the dry ingredients and mix until just combined.

Scoop into muffin tray and bake for 15 - 20 mins or until golden brown.

Spice Muffins

Its been a while since I last baked. A group of friends were coming for a breakfast gathering and I decided to bake something simple for our potluck.  

I realised that lost touched with the baking world and couldn't sync.   I just could not focus at all, my fickle mind kept changing.  One moment was a cheese cake, another moment was a butter cake and so no.  I ended up with a last minute bake, something that I can churn fast before my guests arrived within that one hour.

Phew ...... and I did it.


The texture was really fluffy and not too sweet.  Unfortunately the spice aroma and taste wasn’t what I imagined.  Next time, I will not use bottled spices but rather freshly grated ones.

I also paired it with my Rhubarb and strawberry jam which gotten good feedback. 

We had such a good time together all the way till it was time for some to pick up their kiddos.  Always love such company.


What you need:

250g plain flour
155g castor sugar
1 tbsp baking powder
½ tsp salt
2 tsp nutmeg (next time used fresh)
1 tsp ground cinnamon (same)
½ tsp ground clove
½ tsp ground allspice
1 egg
1 cup cream
½ cup milk
90g melted butter
50g dried currants

Method:

Preheat oven to 180ºC.  Prepare muffin pan.

Mix all the dry ingredients in a bowl.

Whisk the wet ingredients till combined.

Add dry ingredients into wet and stir until just combined.  Do not overmix.

Spoon batter into tin and baked for 20 mins or until cooked.

Cool in tin for 5 mins and transfer to cooling rack.

I served this with Rhubarb and Strawberry Jam (see my next post).

Double Chocolate Muffins

I have stacks and stacks of recipe cuttings from all forms of media.  A habit that I am trying to change because most of it lie in a box for years and I never really gotten to try it out, for there are so many blogs, you tubers and forums that I can draw inspiration or learnt from.

So while doing a mini spring cleaning, I found this recipe and set aside for quite a while.   Anything that says double chocolate is definitely the kind of sweets stuff that my family will enjoy.

I decided to give this a try as I wanted to bake for a sweet lady who is giving us hamsters to replace two whom died so suddenly.

My kids love these little muffins and am glad that J and her kids did too.


Verdict: Moist and fluffy.  With intense chocolate and not too sweet.  If you have sweeter taste bud then add in 50g of castor sugar.


Sorry that I couldn't credit the adaption but this was from "Good Housekeeping".


What you need:

125g unsalted butter

100g chocolate, I used lindt
225g plain flour
1 tsp baking soda
40g cocoa powder
150g brown sugar (addition of 20 - 50g castor sugar if you like it sweeter)
200g white chocolate chip 
1 egg
222g milk
150g yoghurt
1 tsp vanilla
pinch of salt

Method:


Preheat oven to 190 deg.  Prepare muffin tin.


Melt the butter and chocolate till it is melted.  Set aside.


Sift flour, baking soda, cocoa powder, brown sugar together.


Add in chocolate and a pinch of salt.  Stir till combined.


Beat egg, milk, yoghurt and vanilla in another bowl.


Add in chocolate mixture to it and stir till combined.


Pour the liquid mixture into the dry ingredient and fold together.  DO NOT OVER MIX.


Scoop batter into muffin tin and bake for 20 - 25 mins.


Cool on tray.

Cinnamon Sugar Donut Muffin

In Sept 2009, I baked Jammy Donut Muffin which is sometimes similar to this Cinnamon Sugar Donut Muffin.   That is definitely a long time ago, so today I took the opportunity to join Bake Along for their July event.

I used Frozen Wing's recipe as I wanted to use my mini muffin tray which has been sitting really patiently in the cupboard.

I am sure my little one will be delighted to have this for tea.

Next, will I be game enough to try to attempt Cronut?  




Learning experience: 

It is soft and fluffy when eaten hot.  It doesn't have the texture of a deep-fried donut if that is what you are expecting.  It is also not cake-like with a strong buttery taste when it is eaten fresh.  After a day of rest, the flavour seems to develop.  


What you need:

187g plain flour
1/8 tsp baking soda
1¼ tsp baking powder
¼ tsp salt
1/8 tsp grounded nutmeg
¼ tsp ground cinnamon
110g milk
1 tbsp buttermilk (1 tbsp milk with ¼ tsp lemon juice)
56g butter, softened
60g castor sugar
1 egg

For doughnut coating

56gm unsalted butter, melted (I needed more to do a batch of 24 mini muffins)
½ cup sugar mixed with ½ tbsp ground cinnamon

Method:

Preheat oven to 177C. Grease and flour the muffin pans

Sift together the flour, baking soda, baking powder, and salt.

In a medium bowl, combine the milk and the buttermilk or yogurt.

In a large mixing bowl, cream the butter for 2-3 mins using a handheld mixer on medium speed. Reduce to low and gradually add in the sugar. Continue to mix until the mixture is light and fluffy.

Add the egg, beating until just combined.

Add the dry ingredients in 3 batches, flour, milk, and flour mixture just until smooth.  Do not overmix.

Scoop the batter into the prepared muffin tray, filling approx 2/3.

Bake for 20-25 minutes, until the tops are lightly golden.

While the muffins are baking, prepare the melted butter in one bowl and the cinnamon sugar in another bowl.


Let the doughnut cool completely on a wire rack, dunk them in the melted butter, then coat them with cinnamon sugar.

Banana Muffin

The last time I baked Banana Muffins was for a gathering with my classmates.  I really love this recipe but unfortunately I didn't have time to take a picture or have a blog post on that.

So today I revisited it again because I am making it for another gathering.



Hope the ladies like it.

What you need:

462g mashed bananas
140g castor sugar
1 egg
48g melted unsalted butter
1 tsp baking powder
1 tsp baking soda
½ tsp salt
216g plain flour

Method:

Preheat oven to 190ºC.

Mash bananas.  Add sugar and slightly beaten egg.  Beat well.

Add the melted butter and mixed well.

Add the dry ingredients and mixed to incorporate.  Do not overmixed.

Scope into muffin cup and bake for 20 mins or till golden brown.

Bak Kwa Muffin

Next is the Bak Kwa Muffin.  Years ago, I tasted this during a baking class that I attended.  The teacher's recipe was actually published in one of those Chinese magazine but since I don't subscribe, I never had a chance to try that.  So this is what I came up with.  Initially I was worried that I overload it with bak kwa but am pleased that it turned out much better than I expected.


If you like bak kwa, you might enjoy this.  Personally I like it very much.  It has the right balance of savoury and sweet in this muffin.

Give it a try if you like bak kwa just like me.


What you need:

143g plain flour
2 tsp baking powder
1/2 tsp salt
103g castor sugar
45g melted butter
1 egg, beaten
1/2 cup milk
125g bak kwa, cut into tiny pieces

Method:

Sift flour, baking powder and salt into a bowl.  Add sugar and give it a quick stir.

In another bowl, but melted butter, egg and milk together.  Whisk till it is combined.

Add bak kwa into flour mixture.

Add egg mixture into flour mixture.

Stir till combined.  It is okay to be lumpy. 

Spoon into the liner and baked at 180 deg for 20 - 25 mins or till golden brown.



Green Tea Muffin

It’s been quite a while I had a party.  My kinder friends are coming over for a gathering and I am very excited especially when it is a spa theme.  

With my new toys, I actually can't wait to put my "new found" skill into practise. 

How can a party be without food right?  

Now we are back to be like little girls going for a dressed up party and I am so looking forward to.

As usual, I broke down the process.  So here is what I put together on top of some durian that CC will bring over.

Green Tea Muffin.  I made a batch of cooked red bean but somehow I couldn't find it anymore except for a little speck left in the fridge.  I guess my helper has been helping herself again.  It just irked me when she eats without having the family in mind.  So often, she will help herself to what she likes and left nothing for the family.  Am I sounding petty?

Luckily I have a can of red bean but upon opening it is actually a paste rather than cooked red bean.  Though it wasn't what I had in mind, at least it didn't foil my plan.


Verdict: I find it a little too dry for my liking, will adjust the liquid for my next round.  Overall, really like the green tea flavour.



What you need:

7g matcha powder
143g plain flour
2 tsp baking powder
1/2 tsp salt
100g castor sugar
100g melted butter
1 egg, beaten
1/2 cup milk
red bean paste

Method:

Mix dry ingredients together.

Whisk egg, melted butter and milk together.

Add egg mixture into flour mixture.  Stir till combined.  It is okay to have lumps.

Fill liner half and top with some red bean paste and fill the remaining to 2/3 full.

Bake at 180 deg for 20 - 25 mins.

Blueberry Oatmeal Muffin

Was thinking of baking a Banana Muffin for breakfast.  You see, these days, my kids just refused to eat breakfast during weekdays.  

I am not sure whether was it due to lack of time (to catch more beauty sleep) or the sandwich breakfast that got them bored.  I am sure if I offer Nutella, my son will eat but it is dangerous to load him with too much sugar in the morning. 

Why Banana Muffin?  Well, just right after Christmas.  GL, DP and myself met up in CR's house for tea and I brought Banana Muffins.  I really like that recipe.  I didn't have time to document this event and bake as I was rushing though.

I kept forgetting to buy banana on my grocery trips too.  Arrgh I am so irritated by my forgetfulness.  One fine day, I am sure I will forget my own name!

Since I overlook the banana, I will have to make do with other ingredients on hand.  The thought of them not eating breakfast makes me worry especially when they have a long day in school. 

So here is my Blueberry Oatmeal Muffins.  I really like the crispy crust is formed when fresh out of the oven.  In fact, I walloped up one right after lunch.
