Long ago, I attempted a One bowl banana bread recipe (here). After viewing a you-tube channel, it looks pretty similar to the one I tried before.
Since I have some banana that I bought the other day and it has ripen to the stage for baking. I baked this, think will be great for my kid to have it as on the go breakfast.
Learning experience:
I would increase the sugar the next round as I find it not sweet enough despite the ripen bananas.
What you need:
300g ripe bananas
150g unsalted butter, melted (set aside 20g)
2 eggs
3 tbsp milk
100g brown sugar (set aside 15g) (will increase to 150g)

300g plain flour
¼ tsp salt
¼ tsp baking soda
½ tbsp baking powder
100g nuts of your choice, roasted and roughly chopped
Method:
Preheat oven to 175°C. Greased a loaf pan.
In a big mixing bowl, mashed bananas.
Add in melted butter, brown sugar, milk, and eggs.
Whisk until smooth.
Sift in plain flour, salt, baking soda and baking
powder. Mix to combine.
Add in chopped nuts.
Mix to incorporated
Pour into the loaf pan, sprinkler the remaining nuts on top. Pressing down a little to adhere. Then drizzle in the brown sugar and melted over it.
