Chocolate chips and Orange Cookies

After seeing Daily DeliciousChocolate chips and Orange Cookies, I knew I have to bake these.  Since I don’t have orange extract and in the fridge sitting quietly, I have a bottle of cold-pressed Yuzu Oil.  This oil was a gift and it was 100% pure oil.  The smell while creaming the batter and during baking was totally awesome!

Unfortunately, dark brown sugar was the culprit of these very ugly cookies.  Please don’t let it fool you for it is very good.  How can you go wrong with chocolate and orange, right?

Learning experience: The cookie is very fragrant.  The yuzu really came through.  The orange peel actually added a little chewiness to the cookie but overall, I think this is a crispy cookie.

I have modified it a little to make it less sweet as there are chocolate chips in it.

Happy Monday!

Yield : 40 pcs

What you need:

225g unsalted butter
185g brown sugar
80g castor sugar
½ tsp yuzu oil
2 eggs
310g plain flour
1tsp baking soda
½ tsp salt
200g chocolate chips
100g candied orange, chopped

Method:

Preheat the oven to 190°C.  Line the baking sheets with baking paper.

Sift flour and baking soda together.

Beat the butter with salt, yuzu oil, and sugars until light in color. Add the eggs and beat until combine.

Fold in the flour and then add in chocolate chips and chopped candied orange.

Use 2 inches scoop, scoop the dough onto the prepared baking sheets.

Bake for 10-12 mins or until the edges start to firm but the center will be soft, let the cookies cool completely on the baking sheet.

Store in air tight container.
