I don't know about yours
but my kids love fish and chips. I don't really know the origin of fish and
chips but before our kids came along, we too loved fish and chips. I
remembered while touring around New Zealand , we even chanced upon one that sells deep fried
scallop in Omaru and it was so good. During that time, it was unheard of
in Singapore .
During our last holiday in
the States, I also had a chance to eat deep-fried scallops again. Though
it was so fresh and good but I still can't forget those that we had in Omaru.
I think I want to replicate it someday at home but first I need to get
fresh scallops.
Today I had chosen Alton
Brown Beer batter fish and chip for our dinner. The batter-fried
beautifully and it has a nice crisp as well.
My family said it was good
but personally, I think I should work on that baking powder.
I took the lazy way to
prepare the fries. I bought a bag of frozen but I just couldn't resist
the smiley face ones. In the end, we had this for dinner. It definitely
brought a smiley face on my little one.
The salad was a simple of cabbage and carrot tossed in Thousand Island dressing with mayonnaise. Surprisingly my son takes to that as he dislikes
mayo.
I am glad that dinner ends well today.

What you need:
Serve 5
3 dory fillet (cut into half each)
286g plain flour
1 tbsp baking powder
1 tsp salt
1/4 tsp cayenne powder
1 can of cold beer
cornstarch for dredging
Method:
Rinsed dory fillet, pat dry and season with salt and pepper. Set aside.
Mixed plain flour, baking powder, salt and cayenne powder together.
Add in a cold beer slowly, bringing the flour in together. Mixed till you get a smooth batter. Chill in the fridge for 15 mins. (you can let the batter stand for an hour too).
Coat fillet with corn starch and dip into the batter. Deep-fried immediately.
Drain and serve with chips and salad.

Oh yes, this is a very popular dish with my boys too, they always ask for this whenever we eat out, because I don't like to fry fish lol! I must say yours looks perfectly cooked!
