Salted Egg Pork Chop

Weeks ago, hubby bought us to have dinner in the west coast area.  I haven't been to this area after I got married!  Things definitely changed alot here.

For dinner, one of the dish that I love was Salted Egg Pork Chop and I told myself that I must try replicating this at home.

So here is my attempt.

I feel the taste still lack of something, hubby felt that there should have more salted egg taste to it.  So next time I will increase it to 3 egg yolks instead.

What you need:

250g pork loin (I used pork fillet)
1 tsp sesame oil
2 tsp soya sauce

corn flour for coating

1 tsp mined garlic
2 tbsp butter
1/4 cup of evaporated milk
2 salted egg yolk, mashed (need to increase to 3)
2 sprig of curry leaves (stem removed)

Method:

Marinate pork for an hour.

Coat pork with corn flour and deep fried.  Remove and drain.

Heat wok, add 2 tbsp butter.

Add garlic and curry leaves and sautee till fragrant.

Add salted egg yolk, mixed well.

Add in evaporated milk.  Mixed well.

Season with salt and pepper.

Add in cooked pork and coat well with sauce.

Serve with rice
