Gula Melaka Coconut Jelly

These days the weather is crazily hot.   With kids working hard in school and hubby's frequent travel, I think it is wise to brew more cooling drinks and prepare more "cold" food. 

After seeing VR mentioned about eating gula melaka jelly, I knew that I have done it sometime before and true enough, I did in my old blog.

Unfortunately I didn't manage to buy nice young coconut.  Hard to gauge whether the meat is tender and young.  Do you know how?

Now let's enjoy this Gula Melaka Coconut Jelly.



What you need:

950ml fresh coconut juice (I used 900ml for firmer texture)
50g gula melaka, chopped finely
1 packet of Konnyaku powder
coconut meat

Method:

Crack open the fresh coconut and remove juice. Set aside.

Using a metal spoon, scrap coconut meat out. Set aside.

In a saucepan, combine half the coconut juice with the gula melaka. Stir till gula melted.

Combine coconut juice and konnyaku powder, stir to break down the konnyaku powder.

Combine both coconut juices together and bring to boil.

Using a tablespoon, pour some jelly into the jelly mould.

Add in the coconut meat and pour jelly over it.

Cool and chill.

Serve cold.

  2. Nice! I just had coconut jelly too, but is made of agar agar and fresh coconut juice and flesh. Edith, where did you buy your coconut from? And was it easy for you to open them?

    1. I buy it from NTUC. I can never open it myself as I am afraid of the Cleaver. My hubby is the one that does it all the time.
