Easy Waffle

What a timing for my girl to be down with Chicken Pox.  She might not be able to go for her PSLE oral in school.  Am praying that this Sunday doctor's review will be favorable.   In fact, she is stressed that she is lacking practice for her oral in school.


Luckily, her appetite is not affected and she is always hungry and to me, that is a good sign.  

Actually she asked for pancake but I saw Noob Cook's Easy Waffle and I decided to give this a go instead.



Finding: It is very light and has a nice crisp to it.  On its own, it is rather bland which was surprising.  I thought the coconut oil will give it a nice aroma but it doesn't have that as with coconut cream.  It does pair very well with a blueberry sauce that I prepared.

Girl wanted more than 2 servings which I have to stop her.

True to its name, it is indeed very easy to put together.

What you need:

2 large egg (60 grams)
250g plain flour, whisked or sifted
200ml butter milk or regular milk
80g coconut oil
1 tbsp white sugar
4 tsp baking powder whisked or sifted
¼ tsp salt
½ tsp vanilla extract

Method:

Preheat waffle iron.

Beat egg in a large bowl until frothy.

Add in flour, milk, oil, sugar, baking powder, salt and vanilla.

Whisk until the batter is just smooth.

Spray preheated waffle iron with non-stick cooking spray.

Pour waffle batter onto hot waffle iron. Cook until golden brown.

Serve hot with maple syrup and butter.

  1. Wish your girl speedy recovery and back on track soon for her PSLE ... this waffle looks very light and crispy. I don't have waffle iron but my girl tried out a rustic kinda waffle using grill pan.

    Coincidentally I've been trying out waffles for last 2 days but sadly both recipes yield rather bland waffles. Still in search for the right recipe....

  3. your waffles look perfectly golden and yummy! I think it taste a little bland due to the little sugar used, as you will be serving it with maple syrup or blueberry sauce. You can try the pandan version as that will be more aromatic with pandan paste and more sugar :D
