Neil's Pancake

My daughter specifically asked for pancake for today's breakfast.  When my child is sick, I normally try to accommodate their wish as much as possible.  

Luckily she is not seriously bored at home as she is diligently study for her Prelim exam.   I am so bless to have a girl like her.  Since young, she is independent and self motivate.   

I was too lazy to search for new pancake recipe.  This Neil's Pancake is well like by family as its flavor is rich and yet fluffy.  

If your preference is like ours, I highly recommend you try this one.    

Finding: This pancake is nice and fluffy.  It has a nice buttery flavor to it and I can actually eat it plain.

What you need:

280g plain flour
8g baking powder
78g castor sugar
½ tsp salt
3 egg, separated
1.5 cup milk
85g melted unsalted butter
1 tsp vanilla


Sift flour and baking powder. Add sugar and salt together into a large bowl.

Whisk yolks, milk, melted butter and vanilla together.

Whisk wet mixture into the dry mixture. Should be slightly lumpy.

Whip the egg white until medium peak. Not stiff. Do not over whip the egg whites.

Gently fold in half of the egg white into the egg batter with a large spatula. Then gently fold in the remaining egg white.

The batter should be slightly lumpy and have large parts of the egg whites not fully incorporated.

Heat pan and add 1 tsp butter. With a fat ladle, scoop the batter and pour into the hot pan. (optional, you can add your blueberries or chocolate at this stage)

Flip over once brown to cook the other side.

Serve warm.
