I have so many recipes that I wanted to attempt but just don't know how to accomplish them all.
Basically for this recipe, you can use any of your favourite bread recipe. The "special" about this Viral cream cheese bread 火爆奶酪面包 is that it is filled with cream cheese frosting and then coat with milk powder.
Findings: This is my 3rd attempts on this recipe. The previous two was a disaster. Once was hard as it overproof and the second time, I had a big bubble in the bread. I think it has to do with my yeast.
Finally I got a decent bread to keep as record.
Since my kiddos are not big fan of milk powder, I have coated both sides differently. One side with milk powder and the other side with cocoa powder. I should have thought of milo instead as both love that too.
I don't like milk powder but for this one, it tasted really nice. A perfect way for this aging mommy to add some calcium to add to her aging bones.
What you need:
Dough
110g bread flour
20g cake flour
20g sugar
1g salt
1.5g instant dry yeast
25g egg
65g milk
15g butter
20g cake flour
20g sugar

Filling
90g cream cheese
30g unsalted butter
10g icing sugar, sifted
10g icing sugar, sifted
5g milk
1 tsp vanilla paste
1 tsp vanilla paste
Coating
15g skim milk powder or cocoa powder or milo
5g icing sugar
15g cocoa powder
5g icing sugar
Method: (Dough)
Grease a 6" round pan.
Combine all dough ingredients (except butter) and knead till you get a soft dough.
Add in butter and continue kneading till window pane stage (approx 20 mins)
Shape
dough into a ball and place inside greased pan
Cover
pan with cling wrap and allow to proof till double in size.
Bake
on second lowest rack, preheated oven of 170°C for 25-30 mins
Cool bread on wire rack completely.
Method: Fillings
Beat cream cheese with sifted icing sugar until it is smooth.
Add
milk in 3 additions, mixing well before adding in the next portion
Add in vanilla paste and mix well
Chill
mixture for 30 mins
Sift
skim milk powder/cocoa powder with icing sugar onto a plate
Slice
bread into quarters and on each quarter, make 2 slits (do not cut through)
Spread cream cheese filling into the slits
Then spread filling onto the sides of the bread
Serve
Note: I like it eaten cold.
