Chocolate Banana Cake

When I saw my friend baked this Chocolate Banana Cake, I knew I have got to try it for it looks so inviting.

Learning experience:

The batter was a little too thick, so I added in 2 tbsp of milk to it.

Overall, the texture is very good.  Soft and yet light.  My family enjoyed it so much and so were my friends.

I also added in more mini chocolate chip as I wanted it to be fully covered by the chips.

This recipe is a keeper.   Thanks A for sharing this great recipe.

What you need:

125g unsalted butter, soften
95g brown sugar
1 large egg  lightly beaten
1 tsp vanilla extract
150g very ripe banana, mashed
55ml dairy whipping cream
2 tbsp milk

45g cocoa powder
110g cake flour
1 tsp baking powder
1 tsp baking soda
¼ tsp salt

100g mini chocolate chips

Method:

Preheat oven to 170°C. Grease a 9x5x3 loaf pan.

Sift cake flour, baking powder, baking soda and salt.   Set aside.

Cream the butter and brown sugar till fluffy.

Gradually beat in the beaten egg until incorporated.

Beat in the mashed banana, vanilla extract and whipping cream.

Fold in flour mixture in 3 additions, fold well in each addition.

Pour mixture into pan and level the surface.

Sprinkle the top with chocolate chips and press lightly into the batter.

Bake for about 50 minutes or until a tester comes out clean.

Cool cake completely before cutting and serving.

Enjoy!
