My first taste of
tortilla was at my friend, F's house. F can really cook very well and I
miss her and those gatherings we had. That was the last meal that
we shared together as now she is back in her own country. Wish one day we can come together again to
cook and dined. Those days brought fond memories.
Initially I got
missed up with tortilla and tortilla wrap.
To me, tortilla was like a naan wrapped with fillings. Thus when I had my first taste, I was
relatively surprised.
Now I know the difference and realised my mistake. Tortilla (Spanish) is what you see now, while those wrap (Mexican) is known as Tortita!
My tortilla with egg and potato turned out
too flat. I should have used a smaller
frying pan to create that height.
Nevertheless, my
little one gave me an approval for this and now it is another easy lunch added to our menu.

2 potatoes, peeled and cubed
2 small onion, peeled and diced small
3 eggs, beaten
1/2 cup green peas (optional)
1 small tomato (optional)
salt and pepper to taste
6 or 7" frying pan
Method:
Using a decent amount of oil, cook onion and potatoes till it soften. Drained off the excess oil.
Using the same frying pan, add the cooked potatoe mixture, green peas and tomatoes. Season a little with salt.
Spread it evenly round the frying pan.
Add in salt and pepper to the egg mixture.
Pour evenly round the potatoes.
Set on low flame, cooked the tortilla to a nice brown.
Put a plate over the frying pan and turned the tortilla over to the plate. Slip it back into the frying pan to cook the other side till golden brown.
Either serve hot or room temperature

This is new to me. Thanks again for sharing the difference between tortilla and tortita. I know my kids will love this very much cause there is eggs and potato. I am going to cook this soon :D

DeleteI remembered my first tortilla, prepared by a Spanish classmate. At a farewell party, she brought her Spanish tortilla, with quite a lot of onions and potatoes and of course eggs. It was delicious. Your tortilla brings fond memories of that day. I have not made one in a pan, but have baked my omelette instead :-D
