Totally Chocolate Cookie

When I saw some bloggers posted their Totally Chocolate Cookie by Nigella Lawson, I knew right away my son will love it and it is time to bake a batch of chocolate cookie for him.

I need these to motivate him to study for his prelim or rather I need him to sit down for at least an hour to revise.

It is indeed very chocolaty but he likes it a lot.  He said it has a melt in the mouth type of texture.

Let’s hope these cookies are good enough for him to pass the exam. If yes, then when comes to O level, I will do a double batch. Hahahahaha




What you need:

125g dark chocolate (minimum 70% cocoa solids)
150g plain flour
30g cocoa powder (sieved)
1 tsp bicarbonate of soda
½ tsp salt
125g soft butter
75g soft light brown sugar
50g white sugar
1 tsp vanilla extract
1 large egg (cold from the fridge)
350g dark chocolate chips (or semi sweet chocolate morsels)

Method

Preheat the oven to 170°C.

Melt the 125g dark chocolate either in the microwave or in a heatproof dish over a pan of simmering water.

Put the flour, cocoa, bicarbonate of soda and salt into a bowl.

Cream the butter and sugars in another bowl till light and fluffy.

Add the melted chocolate and mix together.

Beat in the vanilla extract and cold egg, and then mix in the dry ingredients.

Finally stir in the chocolate chips.

Scoop out with an ice cream scoop and place on a lined baking sheet about 6cm apart. Do not flatten them.

Cook for 18 minutes, testing with a cake tester to make sure it comes out semi-clean and not wet with cake batter.


Leave to cool slightly on the baking sheet for 4-5 minutes, then transfer them to a cooling rack to harden as they cool.

    Since my last bake of these cookies, my husband and son has been telling how much they love these cookies but I sort of ignore them and bake other recipes... LOL!

    If they complain, they can bake these cookies themselves... LOL!
