Avocado Cake

After my semi success with the Avocado Chiffon cake, I venture further to see whether I can intensify the green hue as I saw Food Me Mover's Avocado Cake with P seed was so beautiful.

Unfortunately, I puree the avocado too way in advance and it oxidised by the time I bake it.



Findings: Despite its colour, the cake is moist and soft.  With avocado as fats replacement over butter, this cake is definitely a healthier version of a butter cake.  Definitely a keeper.

I also omitted the frosting as the portion I left for it turned brown and I reckon that it will look awful as frosting.

What you need:

50g unsalted butter
125g small avocado
180g castor sugar
4 eggs, separate
100g plain flour
50g p seed
50g almond flour
2 tsp baking soda
2 tbsp lemon juice

Method:

Greased and lined a 2 X    loaf tins.

Cut and scoop avocado and puree with lemon juice until creamy.

Beat butter and sugar until creamy.

Add avocado puree into butter mixture and beat until creamy.

Add one egg yolk at a time and beat until combined.

Sift flour with baking soda

Fold in flour, p seed and almond flour.

Whisk egg white with a pinch of salt until stiff.

Gently fold into egg yolk batter.

Pour into pan and bake for 50 mins.

Transfer to cooling pan.

Frost.


Frosting

What you need:

1 small avocado
1 tbsp lemon juice
200g icing sugar

Method:

Puree avocado with lemon juice.

Whisk icing sugar into it and beat until well combined.

Frost cake.

  2. Now that's a nice way to make me eat avocado... I don't like it as a fruit but as a substitue of fats in cake, u totally enticed me! Keeper

  3. Awww too bad abt the avocado turning brown, next time add in some lime juice to keep it looking vibrant. But nonetheless your cake looks great!

    I think your cake looks lovely. I wouldn't imagine the avocado would make it very green even if you waited until the last minute. I must say, I would love to try this recipe. It sure looks delectable and moist. Thank you so much for sharing, Edith. I'll be saving this!
