Egg and Bacon Wrap

I met up with P to have breakfast and I like my order of Egg and Bacon Wrap so much that I told myself that I will want to replicate this at home.

My first attempt, I totally forgotten about one item and after tasting it, I realised what was missing.

Done a second batch and I must say it is close to what I had eaten.



What you need:

4 sheets of tortilla
6 eggs
8 slices of streaky bacon
1 yellow onion

Shredded lettuce
Edam cheese

Method:

Beat eggs and season with salt and pepper. 

Heat a rectangle non stick pan and pour half the egg mixture on low heat.  Cook until it forms an omelette.  Remove and proceed to cook the second batch of egg mixture.


Fry bacon until crispy.  Coat with a little honey.

Sliced the yellow onion finely.  Add in a small knob of butter and sautee onion until it caramelized.  Remove.

Spread the tortilla, sandwich the bacon with egg omelette over a bed of caramelised onion and lettuce.  add a generous amount of cheese.

Roll up the tortilla and cut into halves.

Serve immediate.
