Walnut Charcoal Loaf

I just bought a fresh bag of walnut and we ran out of bread, so Walnut Charcoal Bread it will be for today.


Learning experience: 

Totally love this combination.  Even my highly sensitive taste bud mom gave a thumbs up for this.

Definitely a keeper.

What you need:

Sponge dough

100g bread flour
¼ tsp instant yeast
10g castor sugar
60g water

Main dough

150g bread flour
50g plain flour
1 tsp charcoal powder
4g instant yeast
20g castor sugar
½ tsp salt

30g egg
100g cold water

30g unsalted butter, softened

Method:

Mix sponge dough ingredients to form a rough dough.  Cover and let it sit for 1 hour.  Chill for 12 hours.

Combine sponge dough and main dough ingredients with egg.  Knead to a smooth dough.

Add in butter and continue to knead till it reached the window pane stage.

Shape into a ball and place in an oiled bowl.  Cover and let it proof for ½ hour.

Divide the dough into 60g each.  Shape into a ball and let it rest for 10 mins.

Flatten the dough with rolling pin and roll into a oblong. 

Spread fillings and roll.
