I just bought a fresh bag of walnut and we ran out of bread, so Walnut Charcoal Bread it will be for today.

Totally love this combination. Even my highly sensitive taste bud mom gave a thumbs up for this.
Definitely a keeper.
What you need:
Sponge dough
100g bread flour
¼ tsp instant yeast
10g castor sugar
60g water
Main dough
150g bread flour
50g plain flour
1 tsp charcoal powder
4g instant yeast
20g castor sugar
½ tsp salt
30g egg
100g cold water
30g unsalted butter, softened
Method:
Mix sponge dough ingredients to form a rough dough. Cover and let it sit for 1 hour. Chill for 12 hours.
Combine sponge dough and main dough ingredients with
egg. Knead to a smooth dough.
Add in butter and continue to knead till it reached the window
pane stage.
Shape into a ball and place in an oiled bowl. Cover and let it proof for ½ hour.
Divide the dough into 60g each. Shape into a ball and let it rest for 10 mins.
Flatten the dough with rolling pin and roll into a
oblong.
