Next was our pizza dinner. This time, I chose a Crispy crust pizza. The crust is indeed crispy but it is only on the rim. I do not know whether it is because of the toppings that make the inner crust soggy.

Overall, the family enjoyed this and there wasn't any negative feedback but for self-improvement, I seriously think I should sign up for a pizza class. Somehow, I just could not get it to shape into a nice round like those we ate outside.
If you have a recipe that allows me to be able to shape the dough into a nice round, if you don’t mind, do share with me, please. Thank you.
Crispy Crust Pizza
What you need:
15g yeast
1/2 tsp sugar
1 1/2 cup warm water
458g plain flour
1 tsp salt
Method:
Preheat oven to 250 deg C.
Dissolve yeast and sugar with warm water. Let the yeast sits in the water till it is foamy.
Mix flour and salt together. Create a well in the centre.
Pour in the yeast mixture and slowly bring in the flour.
Knead for about 2 mins. If the texture is wet, add a 1 tbsp of flour.
Rest dough till it double in volume.
Punch down and divide into 4 portions.
Rest for another 10 mins covered.
Shape dough into round (approx 12")
Bake for 4 mins, remove and add toppings. Return to bake for another 6-8 mins.
Note: The sequence to the topping should be: herbs, pepperoni, cheese and then pizza sauce. (I topped another topping of cheese after the pizza sauce)

Try putting a flat tray to be preheat so when you put in the pizza it will sit at the bottom of the pizza tray. or use a pizza stone.
ReplyDeleteas for shape it is practice
ha I do have a pizza stone but just too lazy to take it out. Thanks for your tip.
