Cheesy Heart

Today is Vesak Day and it is also a long weekend.  I woke up to such perfect cool weather.  Its sure been a long time since we last had such nice weather.  I seriously don't mind the wet weather.  Since hubby is not around, thus I decided that we stay home instead as I need have energy for tomorrow charity bake.

Princess was yearning to bake again.  This time, she has done some Cheesy heart.  Initially she was having some problem with rolling out the dough.  After some pointers, she was managing it well.

Another easy recipe that kids can do and trust me, this tasted really nice too.

What you need:

175g cold butter
255g plain flour
1 tsp salt
1/2 tsp pepper
175g cheddar cheese + extra as topping, grated
2 egg yolks
1 egg for glazing

Method:

Preheat oven to 200 deg.  Prepare a cookie sheet.

Cut butter into cubes.  Chill.

Add flour, salt, pepper into a bowl.

Put in chilled butter and rub till it becomes bread crumb like.

Add in grated cheese and then egg yolks.   Mix with fork to form a dough.  Shape into a ball with your hands.

Divide dough into four.

Dust some flour on the table, with a rolling pin, roll out about 5mm thick.  Cut with a heart shaped cutter.

Glaze cookie with egg.  Sprinkle some cheese on it and bake for 8 - 10 mins. or until golden brown.

Cool on tray for 5 mins and transfer to cooling rack to cool further.
