Filipino Curry

Till now, it has been a difficult task to cook curry at home as my little one doesn't take to spicy food too well.  The only curry she takes is from Roti Prata.

So here is a Filipino Curry that doesn't include chilli in it and trust me, it is surprisingly yummy.

Next time, I will increase the liquid to create more gravy.

Am linking this to Little Thumbs Up  organised by Zoe of Bake for Happy Kids  and Doreen of My Favourites 123 and this month hosted by Miss B of Everybody Eats Well in Flanders with the theme, Curry Powder/ Curry Paste.

What you need:

300g lean pork, cubed
2 tsp peanut oil
1 shallot, minced
1 tbsp minced garlic
100ml full cream evaporated milk
4 tbsp curry powder
1 tsp tumeric
1/2 cup chicken broth or water (next time I will increase to 1 cup of broth)

Marinate pork with
1 tbsp light soya suace
1 tsp olive oil

Method:

Sautee shallot and garlic till fragrant.

Add in marinated pork and stir fry evenly.

Add curry powder and tumeric powder and stir till meat is well coated.

Add in evaporated milk and broth.  Bring to a boil and let it simmer for half hour or till pork is tender.

  2. Hi Edith,

Thanks for participating in the curry event. Hmmn, filipino curry, something new to me, I thought that curry is only available in SG, MY, TH and ID and the indochina countries, didn't realise that Philipines has its own curry too! :)

My 2 kids also cannot take curries that are too spicy, I often have to tone it down for them.
