Old Cucumber Soup 老黄瓜汤

I have been boiling soup more regularly now because my dad commented that we don't drink enough soup!

Partly also because my kids were missing grandma's soup and because of mom's poor health, we don't dine there anymore.

I remembered once my helper actually deskin the whole old cucumber.  Thus I am showing you how to process the old cucumber when making the soup.

Mom said do not use bare hand to scoop the seed as it will make the soup sour.  So use a spoon to remove all the seeds.  

Do not deskin, just wash it with a brush.

Do not cut into cubes as this will break down the melon when it is cook.  See how soft the flesh is.
