Fried chicken with lemon sauce

I had measles, mumps, chicken pox and shingles before I reached 21 years old.  So you can consider me quite experience in handling such illnesses.  Shingle was the worst and also the weirdest experience.

Anyway, during one of those illnesses, I remembered my mom wanted me to abstain from chicken for 100 days.  I recalled the very first day when I got well was that I wanted her to cook Fried Chicken with lemon sauce.

This time round, I cut the chicken smaller to turn them into nuggets.  I seriously do not like the idea of my kids eating Chicken McNuggets.  To me, those are not chicken, same goes with their Chicken Burger.  It is just flavoured flour patties! 

I promised my little one that I will make her some homemade and of real chicken.  Thus I combined the two into one.  Satisfy the kid and also satisfy the mom.




What you need:

5 Chicken Thigh deboned and cut into chunk
1 tsp salt
pepper
1 egg white

Plain flour for coating

Lemon Sauce:

1 lemon, juiced
1 tsp corn starch
1/2 tsp sugar

Method:

Marinate chicken with salt and pepper, mixed well.

Add in egg white and mixed well.  Let it chill for 6 hours.

Heat a wok with enough oil for deep fry.  Add in chicken (do not overcrowd) and fry till pale white.  Remove.  Continue with the rest.

After done, increase heat and add the first batch of chicken nugget and fry till golden brown.  Do with the subsequent batches.

Drain and serve with lemon sauce.

Lemon Sauce:

Mixed lemon juice with sugar.  Add in corn starch and mixed well.  Heat pan and add in juice.  Stir till it thicken.  Season with sugar if too sour or add in a little water if too thick.
