Apple Cinnamon Roll

Bought some green apples with plans to make an apple pie.  Last-minute, I ditched that plan and make some Apple Cinnamon Roll instead.

The smell of apple and cinnamon plus the smell of freshly baked bread is heavenly.


We are contented not having any glaze with this.




Learning experience: 


The bread is very soft and fluffy but I should have added the frosting as it was not sweet enough for us.

What you need 

Bread dough


270g Bread flour 
30g Cake flour 
5g Dry active yeast 
15g Milk powder 
30g Sugar 
4g Salt 
½ Egg 
125g Fresh milk 
75g Whipping cream 


Apple Cinnamon


What you need:


55g butter

4 granny smith apple, cored, peel and cubed.
6 tbsp sugar
1.5 tsp cinnamon

Method:


Melt butter and then add in apples.


Add in sugar and cinnamon and cook until it thickens and apples become soft.  Remove.


Dough

Method 

Mix all the ingredients in the bowl. 

Knead until dough is elastic, smooth, non-sticky and leave from sides of mixing bowl. Cover with a damp towel and allow the dough to ferment until double in size, about 60 minutes. 

Take out the dough and punched out the gas. 

Roll dough out into a rectangle.  


Spread the apple cinnamon sauce.

Roll the dough up lengthwise.


Cut into sections approx 1½" thick.



Set into lined baking pan.  Let it rise for ½ hour.

Brush with egg wash. 

Bake at 170°C for about 15 - 20 minutes.



Frostings (I omitted this which I shouldn't)

2 tbsp butter

30g brown sugar
3 tbsp heavy cream
50g icing sugar
1 tsp vanilla

Method:


Melt butter with brown sugar.


Stir in cream.


Whisk in icing sugar and vanilla.


Spread on apple cinnamon roll and serve.
