Fried Cauliflower Rice

My son has been on a really strict diet as he wanted to lose weight for a competition.  Really heart pain to see he struggle to shed that 4kg.  One of those rare days he will come home early, so I prepared this Fried Cauliflower Rice for him.


What you need:

1 head of cauliflower
1 small carrot, cubed small
1 handful of frozen corn
2 eggs omelette
mushroom, chopped fine
1 tbsp garlic, minced
oil
soy sauce
pepper

Method:

Roughly blend cauliflower, (not too fine)

Heat a pan with oil and sautee garlic until fragrant.

Add in carrot and mushroom and cook for 5 mins.

Add in cauliflower and sautee for 5 mins.

Season with pepper and soy sauce.

Serve
