Cold Oven Cream Cheese Pound Cake

Over the weekend, I was joking with hubby that I think I should get my spine screwed up so that I can hop around like a bunny without worrying that a sneeze or a cough will get the disc out of place again.

It is extremely annoying when the slightest movement will cause yet another day of bed rest.  For some who know me personally, I am not that type who sits around and does nothing.

In fact, my cousin who came by to do manicure for us, wonder why I am so busy even though I have a helper around to help out.  Well, I think it really depends on the individual.  Some will leave everything to the helper and some will still be hands-on.  For me, I should say I have a balance but yet time remains a factor for "pampering" time.

Anyway, the weather hasn't been really co-operative when I needed it to be.  My laundry is in a chaotic mess especially now I have more clothing to wash.  When my hubby tells me that this coming week will be a wet one, I was seriously helpless and this is the time I wish I owned a dryer.  Looking at my neighbour's laundry, I too wished I have an awning that I can “wind blow dry” my clothes.  haiz..... 

Enough said, with kids away in school and me, rested enough over the weekend, I itch to bake.  Yet I am clueless on what to bake till I read about this cold oven cream cheese pound cake.  This is a perfect option because I can follow up with a Pizza dinner as well as to use up the remaining cream cheese.

Having not baked for such a long time (I don't consider that Cheesecake was a real bake), I was eager to get moving.  

Perhaps I was overly ambitious to get two items off the oven.  I was trying to pace myself but by the time I got the pizza out of the oven, I was looking forward to the couch.

Well, this Cold Oven Cream Cheese Pound Cake has a fine crumb but I personally find it too sweet despite reducing the quantity.  It also took longer than expected to bake. I had a hunch that it might be my glass loaf pan. 



Learning experience: Overall, besides the sweetness, I think this recipe is a keeper.  Now I wonder whether if I reduce the sugar, will I still get that moist texture.

What you need:

115g cake flour
3/4 tsp baking powder
1/2 ts salt
114g unsalted butter, softened
114g cream cheese, softened
145g castor sugar (I will reduce this to 120g)
3 eggs
1/2 tbsp vanilla extract
3/4 tbsp fresh ginger, grated
1/2 tbsp lemon zest

Method:

Cream butter, cream cheese and sugar till light and fluffy (approx 2 - 3 mins)

Add in egg, one at a time.

Add in ginger and lemon zest.  Mix well.

Lower speed and add in flour, mix till well blended.

Pour into a loaf pan and into a cold oven.

Set temperature at 150 deg (forced fan) and bake for 20 - 25 mins.

    So glad that you could join us this time! Your cake looks moist and lovely. I did reduced the sugar too, by more than half, most of the ang-mohs recipes have very high content of sugar! And my cake turns out moist and soft too, after the reduction of sugar!
    Your pizza looks delicious, the shape does not matter to me, by the time it is sliced and eaten, nobody would remember the shape! The taste is more important! And yours looks very good!

    1. The positive review for this cake is hard to resist and I am happy that the pain was at bay when I started on this cake.

      Am trying to fix that widget problem, hopefully I can do it by trm. Being an IT nerd is terrible. Hope you can pardon me.

    I have heard from my in-laws that it has been raining and pouring non-stop in Singapore last weekend. I know how it feels with lots of dirty and wet laundry piling up... I get that a lot during winter...yuck! That's why I have TWO dryers!!! - LOL!

    Nice to have you back in action and baking along with us. I reduce the amount of sugar for my cake too. I reckon this amount of sugar is also important to achieve a nice golden crust... but too much is bad for our waistline and teeth too... Ops!

    1. Hi Zoe, yes it have been raining and it is very draggy type. Full Day! Luckily, yesterday, there was sunshine in the morning and my 4 loads of laundry are all done. (happy dance)

      As for the cake, actually after converting cups into grams, I hesitated but I don't know why I went ahead with the larger quantity. Must be not in the right frame of mind. LOLz.

  4. Your cake has a beautiful golden colour. JI reduced the sugar as well and plan to reduce even more the next time I make it, think it should be fine since Joyce has done it successfully.

  5. hi edith, yes we got to find the time to pamper ourselves no matter how hectic or busy our life is. Massage, foot reflexology are some of the things i look forward to do when i have free time.

    as for the sugar amt, i have cut down drastically, i only used abt 80gms for half a recipe and it was not sweet ..infact i could have used a little bit more:) anyway, can i chk with you whether you are doing 1/2 or 1/3 recipe..becos when i was chking the sugar amt, i noticed your butter and cream cheese is half the recipe and your flour is abt 1/3 recipe..just to hilite if you made an error in your typing..dont mind ya? anyway, you have a nice golden looking cake there and really nice to have you baking again with us despite the back pain. Really appreciate that! pizza..i dont get a nice round shape too but i used a roller to roll the dough to the rim of the pizza pan..well not perfectly round..like what joyce said, nobody will remember the shape once eaten! LOL! have a good week!

    2. Lena, the measurement is correct. Some how I confused the cup measurement with gram for the sugar. Next round, should be ard 120g for sugar.
