Saw a chocolate cake from my friend's IG post and it leads me to this Chocolate Marshmallow Cookie while browsing.
Perfect timing as I wanted to use up the marshmallow that my girl bought during a last bake. Actually, I was thinking of making Marshmallow Biscuit but the cooking time for the marshmallow is long.
What you need:
170g plain flour
32g black cocoa powder
½ tsp baking powder
½ tsp baking soda
½ tsp salt
113g butter, unsalted, room temperature
150g castor sugar
1 egg
1 tsp vanilla
7 large marshmallows, cut into half
50g castor sugar for rolling
Method:
Preheat oven to 180℃. Line cookie sheet.
In a bowl, sift plain flour, black cocoa powder, baking powder, baking soda, and salt.
In a mixing bowl, cream butter and sugar until light and fluffy.
Beat in the egg and vanilla until incorporated.
Add in the dry ingredients and mix on low speed until fully combined.
Fill a 1 tbsp cookie scoop full. Flatten out the dough.
Fill in half of the marshmallow. Do for 14 cookies base.
Now, divide the remaining dough into 14 portions. Roll into a ball and flatten thinly.
Place on top of the marshmallow and seal the edges. Rip an opening on top to allow marshmallows to be seen.
Roll into a ball, taking care not to seal the opening and coat it with sugar (not the base).
Place onto the baking sheet 3” apart.
Bake cookies for 12 mins or until cracked.
Remove from the oven and immediately cut the cookies with a cutter to round it nicely.
Allow the cookies to cool completely on the baking sheet.
